    Didier Chaput's apprentices left at dawn last Friday morning for Seine et Marne, in the Petit Morin valley, to visit the premises of Moulin Bourgeois, a four-generation-old family business producing flour that is well known in the world of artisanal bakeries in the Île-de-France region.The students were given a guided tour of the premises to find out about the origins of the Couargis mill bought in 1895 and handed down from father to son. Nowadays, the mill possesses high technology  production tools that produce high quality organic flour.
