After graduating from FERRANDI Paris, Thais returned to her home country in Brazil and opened her own confiserie, Mimo confiserie and chocolaterie, specialized in artisanal chocolate, combining Brazilian culture and French culture. 
She has also started teaching online courses in pastry as well as chocolate confectionery since the beginning of 2021.
