A week of Eclairs and Royal Cake for our students on the Intensive Professional Program in French Pastry

    Last week, our students in the Intensive Professional Program in French Pastry flexed their skills and crafted scrumptious éclairs as well as Royal cakes. Eclairs are iconic French pastries which can be found in any corner bakery and pastry shop in France. One might say it’s a staple. Made of choux dough, filled with cream and traditionally topped with chocolate icing, it is the perfect complement to coffee or tea. Our Intensive French Pastry students recalled their earlier lessons on puff pastry and created these original éclairs with original toppings including meringue and strawberry candies! 

    Next on their accomplishment list was the Royal Cake, an elaborate multi-tiered entremet. The base of this chocolate cake is made from dacquoise, chocolate mousse, crunchy dentelle biscuits and coated with chocolate glaze. Students Harsha and Ebere proudly share their beautiful desserts.
