MOF Chef Joël Defives Teaches on the Intensive Professional Program in Bread Baking

    This week, our students in the Intensive Professional Program in Bread Baking were joined by MOF, Joël Defives for two days to delve into the world of viennoiseries and snacking. Focusing on delicacies such as brioche, panettone, pain au chocolat and bressane (to name a few!), our students had the opportunity to draw on previously learned skills and refine them with the assistance of Chef Defives. Our Intensive Bread Baking students really got involved and tried for themselves new techniques and skills, further developing their interest and passion for breads. These gorgeous viennoiseries, including a fun tiger bread and fresh raspberry Bressane, were very popular with students and staff alike. Nothing beats a sweet treat at this time of year!
