METRO & GILLES GOUJON 2018 CONTEST CHOOSE FERRANDI PARIS CAMPUS OF SAINT-GRATIEN FOR THE FINAL
On the 26th and 27th March 2018, METRO and Gilles GOUJON organized the Best Brigade of France competition. This was the 5th edition, and it took place at FERRANDI Paris in the Saint-Gratien Campus. The schools excellence was shown with this event that all students could participate in.
A test of excellence
The trio had to work together using their skills, knowledge and creativity in this event. They began with a trip to the METRO warehouse where the team leaders were able to develop two origional recipes from the premium products selected for the contest. Then, they returned to FERRANDI Paris Saint-Gratien where wines were chosen to pair with each dish, and the apprentices began cooking. On day two, the chefs assisted the apprentices to finish the dishes before presenting them to a jury. The jury included 10 MOF chefs including Christian ETCHEBEST, Philippe LABBE, Michel ROTH or Denis COURTIADE and Philippe FAURE-BRAC, the Best Sommelier of the World.
The support of the apprentices at FERRANDI Paris Saint-Gratien
The first year Bachelor students helped each of the six brigades at each stage of the competition. They were impressed to work with the MOFs, to help their teams win and to watch Chef Gilles GOUJON fillet fish.
The competition winner?
The winner was the restaurant "En Marge", in Aureville, France, but undoubtedly also the apprentices who benefited from this fantastic experience of teamwork.
